A Classic Potato Salad with Roasted Garlic Aioli

The perfect accompaniment to a braai, the potato salad is one of the most delicious sides we make at home, and we love to enjoy ours with lots and lots of Roasted Garlic Aioli!

Ingredients:

4 x Large Potatoes 
4 x Radishes, thinly sliced
1 x Tbs Lemon Zest
4 x Tbs Roasted Garlic Aioli
1 x Small Red Onion
2 x Sprigs of Spring Onion
1 x Handful of Italian Parsley
1 x Handful of Dill

Method:

Cook potatoes (whole and in the skin) with salt in a pot by placing potatoes in cold water and bringing up to a boil until soft inside (check by piercing with a little knife). Take potatoes out and once cool enough to handle, peel and chop into bite-sized cubes. Mix in Roasted Garlic Aioli, radish, lemon zest, spring onion, Italian parsley, red onion and dill.
