A Play on Turkish Eggs
Sunday morning traditions in our households include coffee and breakfast in bed. One of Chef Ollie's favourite breakfasts, or brunches (depending on whether a sleep-in is needed), is a play on Turkish Eggs. Aioli - Turkish Eggs Breakfast
Recipe serves one person, but can be doubled for two.
Ingredients:
Sourdough Bread
1 x Egg
Yoghurt Chutney by Aioli
Red Chilli by Aioli
1 x Tablespoon Butter
2 x Sprigs Fresh Parsley
Aioli - Red Chilli and Yoghurt Chutney
Method:
Boil an egg to your preferred style (soft, medium or hard). Toast a slice of sourdough bread. Brown a tablespoon of butter in a pan and add a teaspoon of Red Chilli. Chop two sprigs of parsley.
Time to assemble: smear your preferred amount of Yoghurt Chutney over the slice of toast and top with an egg. Spoon over the chilli-infused brown butter and sprinkle the chopped parsley to finish it off. Bon appétit!
