Blue Cheese, Sun-dried Tomato, Chilli & Rocket Pasta

We were looking through our family recipe book, inspired by generations of cooking, and found one of our favourite pasta recipes that we are thrilled to share with you!

Ingredients

500g Penne Pasta
50g Grated Parmesan
5 tbs Mascarpone Cheese
100g Creamy Blue Cheese
3 tbs Olive Oil
1 Garlic Clove, crushed
30g (handful) of Basil Leaves
Zest of 2 Lemons
Salt & Pepper to taste
250ml Sun-dried Tomatoes (sauce drained off)
2 Tablespoons Aioli Red Chilli
120g Rocket

Method

Cook your pasta with instructions on the packet.
While pasta is cooking, blend all ingredients except the rocket together with half a cup of pasta water. Put the sauce in a big frying pan and bring to boil. Add the al dente pasta, bubble away for 30 seconds and stir in the rocket. Enjoy with cracked pepper, olive oil and some more parmesan on top!
