Ollie's Banging Breakfast Burger

We love a breakfast recipe over here at Aioli, and Ollie’s Banging Breakfast Burger is exactly what we go for when the weekend comes around (especially if we’ve overdone it the night before!).
Ingredients:
2 brioche buns
Butter
1 onion, chopped
A few sprigs of fresh thyme
A splash of red wine vinegar
4 rashers of streaky bacon
2 eggs
700g beef mince (ideally 80/20 fat ratio), divided into 4 175g balls
4 slices of provolone or cheddar cheese
A handful of fresh chives
Truffle Aioli
Method:
1. Heat an oven to 100°C and place a large baking sheet inside.
2. In a small frying pan set over low heat, add a large knob of butter, the onions, thyme and a splash of red wine vinegar. Cook until golden and soft.
3. Set a large pan or skillet over medium-low heat and add a knob of butter. Toast brioche buns cut-side-down in the pan until golden. Remove and set aside.
4. Turn the heat under the large pan up to medium and add the streaky bacon. Cook until crispy, then remove to the tray in the warmed oven.
5. To the same pan, add the four beef mince balls and press down with a spatula until flat and thin. Once the bottoms are crisp and brown, flip the patties over and top with cheese to melt. Remove the burgers and add them to the tray with the bacon.
6. Finally, fry the eggs to your liking.
7. Slather the bottom of the breakfast burger buns with Truffle Aioli. Top each with two burger patties, two rashers of bacon and a fried egg – sprinkled with fresh chives. Carefully spread the onion mixture on the top bun and place it on top of the egg.
