Salted Caramel Tiramisu

Get your FEASTIVE on and enjoy a Salted Caramel Tiramisu over the festive season.


3 x Extra Large Egg Yolks
3 x Extra Large Egg Whites, Whipped to Stiff Peak
60ml Castor Sugar
1/2 Lemon Rind
1/2 Orange Rind
250g Mascarpone Cheese
125ml Cream, Whipped to Stiff Peaks
125g Packet Finger Biscuits
125ml Strong Espresso Coffee
125ml Brandy
Cocoa Powder for Dusting


Beat the egg yolk together, castor sugar and rinds until thick and pale. Add mascarpone and cream and continue to beat until incorporated. Fold in your whipped egg white - try not to beat out the air. Place biscuits in a single layer in a glass serving bowl and pour over the coffee and brandy mixed together - allow to soak. Melt 125mls of salted caramel in the microwave and pour it over the soaked biscuits. Smooth the mascarpone mixture on top, cover and chill in the fridge over night to set. Dust with cocoa before serving.
