Tuna Tataki and Truffle Parmesan Fries

This is a sexy take on the regular fish and chips. Here, we lightly sear fresh tuna, dress it in a spicy Asian sauce, and serve it with fries, nestled under a blanket of Parmesan, finished with a dollop of our Truffle Aioli.

Ingredients:

400g sushi-grade fresh tuna
2tbsp sesame seeds (we use a mix of black and white)
2tbsp neutral oil
½ red onion, finely sliced
4 spring onions, finely sliced
Small handful of fresh coriander, finely chopped
2 tbsp soy sauce
Juice of ½ lime
1 tsp grated fresh ginger
1 garlic clove, grated
1 tsp (heaped) Aioli Red Chilli
Your favourite oven fries
Truffle Aioli
Parmesan

Method:

1. Cook your oven fries according to the packet instructions.
2. Place the sesame seeds on a plate and roll the tuna in them until fully coated all over.
3. Heat the oil in a frying pan set over high heat. Once up to temperature, sear the sesame-crusted tuna for 30 seconds per side. Remove and set aside to rest.
4. Mix the soy sauce, lime juice, fresh ginger, garlic and Aioli Red Chilli to create the dressing.
5. Cut the tuna into ½ cm-thick slices and place on a serving platter. Drizzle over the sauce and finish with sliced red onion, spring onion and chopped coriander.
6. Top the oven chips with grated Parmesan and finish with Truffle Aioli.
